Skinny Caprese Salad+Shrimp

If you need a delicious, healthy appetizer to bring to a New Year’s soiree, we’ve got you covered!



Ingredients:

4 medium heirloom tomatoes
12 small cooked peeled & deveined tail-off shrimp
3 medium avocados
1 large bunch fresh basil
1 lemon, juiced
organic extra virgin olive oil
aged balsamic vinegar, optional
sea salt to taste
fresh ground black pepper

Instructions:

1. Cut the avocado around the equator and remove pit. Slice into rounds, then remove peel.
2. Lightly toss avocado slices in lemon juice.
3. Slice tomatoes and salt lightly.
4. Layer tomato slices, avocado slices, basil leaves and shrimp. Drizzle with olive oil and balsamic vinegar, if using. Salt and pepper to taste. Enjoy!
