Summer Salad with Pomegranate



Fresh, easy, and good for the body – this rich combination of flavors makes the perfect salad for summer!

Ruby red pomegranates pack a mighty punch of antioxidants, while the hearty quinoa supplies your body with protein, fiber, and amino acids. Top the dish off with a garnish of mint and pair with a glass of French dry rose to really please your palette. Voila!

A few simple steps and a handful of creative ingredients is all it takes to create this beautiful summer plate.

Prep time: 15 minutes  |   Total time: 20 minutes  |   Serves 4

INGREDIENTS

  • 4 cups mixed lettuce and arugula
  • 4 tbsp. pomegranate seeds
  • 2 cups quinoa
  • 8–12 cherry tomatoes
  • 4 tbsp. snap peas
  • 1 whole avocado
  • 2 tsp. olive oil
  • Garnish of mint

A few simple steps and a handful of creative ingredients is all it takes to create this beautiful summer plate.

  1. Cook quinoa according to package directions and refrigerate for 10 minutes
  2. Remove avocado pit by slicing the fruit vertically
  3. Once quinoa is chilled, toss all ingredients together and top off with a garnish of mint!

BONUS: Soak the pomegranate seeds in olive oil for 3 minutes while prepping your salad to create a zesty and healthy dressing. Enjoy!
